'Butterfly pea flowers have an extraordinary natural colouring ability. When brewed, it turns the water a vibrant blue colour, but this isn’t the magical part. The magic comes when the butterfly pea flower is in an acidic environment and the colour changes from blue to either a light pink/purple or deep violet. The intensity of the purple depends on the amount of flowers steeped. I used pea flowers to make jelly flower colors, the results are amazing and beautiful. How to make colour? To make an extract of butterfly pea flower for food colouring, steep about a dozen fresh or dried flowers in a cup of boiling water. After about 15 minutes, strain the liquid and discard the flowers.
