'For my second cooking challenge set by the co-op I had the theme of \'One Pot Wonders\', so I thought I would create a great broth which can be a perfect cure if you have caught freshers flu in your first few weeks of uni. RECIPE: Chorizo and Kale Broth Ingredients: 4 portions 1 large onion 140g Diced Chorizo 100g Kale 1 Tin Butter beans 2 Knorr Chicken Stock Pots 300g New Potatoes Potatoes 2.5 L Water Method: (Slow cooker) 2.5-3.5 hrs Chop the onion and chop potatoes into small/ medium sized slices Heat the slow cooker to high and put in the onion and chorizo with a tbsp of oil. Leave for 10 minutes to sweat. Add the potatoes, water, and stock pots/cubes Leave on high heat for approximately 2 hrs (or until the potatoes are soft) Stir and mash up the potatoes slightly 20 mins before serving add the kale and the butter beans Serve into bowls. Any leftover can be batched up and frozen. Method: (Hob) 40 mins total Chop the onion and chop potatoes into small/ medium sized slices Fry off the onion and chorizo in the large saucepan for 5 minutes. Add the potatoes, water, and stock pots/cubes Leave on a medium heat for 25 minutes (or until the potatoes are soft) Stir and mash up the potatoes slightly 10 mins before you serve add the kale and the butter beans Serve into bowls.
