In general, going without food means that people are allowed to have water and supplements, they just cannot eat anything, which means that the limiting factor for survival in energy.   You can quite easily calculate the amount of energy the human body has by combining the energy stores of glycogen (muscles and liver) and body fat.   For an average well fed male, this comes to approximately 84000kcals, which means that you can survive without food for approximately 40-45 days.   Actual research on survival without food is understandably limited, but some well documented hunger strikes have found people to survive for up to 40 days without any food, and probably no supplements either. This supports the above calculations.   The longest someone has gone without food for is 382 days, which was done by a 27 year old obese man, who only drank water and took a multivitamin until his weight normalised.
