Recipe is below:  It\'s a simple Chinese dumpling that is delicious and is still sold on the streets in Hoiping.  I visited Hoiping recently and bought a chicken coop dumpling at a food stand in Hoiping.  Hoiping is also known as Kaiping in Mandarin.  Hoiping is  near Toisan in southern China.  Hoiping, Toisan, Yinping and Sunwui were originally the four counties in southern China known as \"Sai Yip.  Most of the early Chinese immigrants who came to Canada, United States and other areas in the world were from this area.  When you you make this chicken coop dumpling, your family and friends will be impressed.  Be sure to make extras because everyone will want to eat quite a few of these tasty Chinese dumplings.               Chinese Chicken Coop Dumplings  1 1/2 cups glutinous rice flour 1 cup boiled yams or sweet potato 1/2 to 1 cup hot water 1 cup stir fry filling cooking oil for deep frying  Stir fry your topping and let cool.  A popular stir fry for the topping might be ground pork, chopped Chinese mushroom, green onions, chives, peas, chopped onions, etc.  Add a dash of salt, soy sauce, Chinese oyster sauce, sesame oil.  Stir fry and put ingredients in a bowl.  Let ingredients cool off before using.   Stir fry about 1 cup of filling for this recipe.     Put glutinous rice flour in a big mixing bowl.  Add boiled yam or sweet potato.  Gradually add 1/2 cup of boiled water and mix all ingredients together using fork or chopsticks.  Then use hands to knead dough for 2 to 3 minutes.  Add more water is required.    Roll dough to lengthen.  Brake off into 6 to 8 small pieces. Roll each piece of dough.  Then press dough from the centre out to form a round sheet.  Keep the centre of dough slightly thicker.  Put 1 tablespoon or more of filling into centre of dough.  Fold dough in half and seal into a half moon.  Pinch the edges to seal in filling.  Preheat cooking oil until hot.  Deep fry each Chinese dumpling for 2 to 3 minutes or more until cooked.  Turn over each dumpling a few times to make sure it\'s cooked evenly on both sides.  Remove onto a napkin to soak up any excess oil.  Serve on a plate or a shallow wide bowl.  Add a little light soy sauce if you like.  Enjoy!'
