They created their name by combining their names to come up with the name \"Pizza Pierco\". We were visiting Lower Marsh Market in Waterloo, London and came across their wonderful pizzeria with a two mini mobile gas fired ovens, we found it very difficult to simply walk by, we had to stop and get a pizza from them.  We ordered the \"Veggie\" a Vegetarian pizza made with the following toppings: * Homemade tomato sauce (made with Plum Tomatoes, Oil, Salt and Sugar). * Grilled Aubergine * Oven Roasted Red Peppers * Mushrooms * Mozzarella Cheese * Fresh Basil Leaves  Their dough is a 24 hours proved dough.  Double Zero flour and Semolina flour adds a delicious crispyness to the cooked base of the cooked pizza.  The dough was quickly and skillfully hand spun and stretched and then it cooked in the gas powered oven.  The pizza cooked very quickly (within one & a half minutes) because the oven reaches a temperature of around about 400 degrees centigrade. . Many thanks to the chefs and partner patrons who welcomed us and graciously allowed us a privileged glimpse into their street kitchen to watch the \"pizza making\" action.
